3cupsof jasmine ricecooked and completely cooled, day old rice is best
11ozsquid rings
1/2a pound of peeled deveined shrimpleave the tail on
8ozof crab meat
1red onion sliced
4Thai chili peppers roughly chopped
4clovesof garlic crushed
2tbspsThai soy sauce
2tbspsfish sauce
3tbspsvegetable oil
Instructions
On medium to high heat, pour in oil in a wok or sauce pan.
Once oil is hot, add in the sliced red onions, and allow to soften for about 2-3 minutes.
After onions have softened a little, add garlic and Thai chili, and stir fry for another 1 minute.
Turn up the heat to high, add shrimp and squid, and stir fry for another 1 minute until shrimp starts to turn pink.
Add rice, and continue stir frying for another minute.
Add crab meat, soy sauce, and fish sauce and stir fry for one more minute
Serve hot with a slice of lime (optional)
Notes
Best to use day old rice for this recipe. Also, some people add sugar to their fried rice, but I omit the sugar because I find the onions add enough sweetness to the dish. Feel free to add sugar if you please
