Thai Seafood Fried Rice

This thai seafood fried rice, which is one of my best recipes for fried rice with day old Jasmine rice is the perfect dish to impress your guests!

I could hardly get a good picture of this dish because both me and Mr. Yum were very eager to pounce on it. This thai seafood fried rice is one of my best recipes for fried rice with day old Jasmine rice… Everyone would think you slaved for this one, but it is so so easy to prepare. Sometimes, my local Asian store has really fresh seafood, and this was one of those days so I had to make this dish with the fresh seafood I had bought.

Thai-style Seafood Fried Rice

Ingredients

  • 3 cups of jasmine rice cooked and completely cooled, day old rice is best
  • 11 oz squid rings
  • 1/2 a pound of peeled deveined shrimp leave the tail on
  • 8 oz of crab meat
  • 1 red onion sliced
  • 4 Thai chili peppers roughly chopped
  • 4 cloves of garlic crushed
  • 2 tbsps Thai soy sauce
  • 2 tbsps fish sauce
  • 3 tbsps vegetable oil

Instructions

  • On medium to high heat, pour in oil in a wok or sauce pan.
  • Once oil is hot, add in the sliced red onions, and allow to soften for about 2-3 minutes.
  • After onions have softened a little, add garlic and Thai chili, and stir fry for another 1 minute.
  • Turn up the heat to high, add shrimp and squid, and stir fry for another 1 minute until shrimp starts to turn pink.
  • Add rice, and continue stir frying for another minute.
  • Add crab meat, soy sauce, and fish sauce and stir fry for one more minute
  • Serve hot with a slice of lime (optional)

Notes

Best to use day old rice for this recipe.
Also, some people add sugar to their fried rice, but I omit the sugar because I find the onions add enough sweetness to the dish. Feel free to add sugar if you please

    This looks good I going to try it with cauliflower rice at some point.
